Rasmalai

Super yummy to have and super easy to make!

One of the most famous Bengali sweets, Rasmalai, is a classic Indian festive dessert and popular among Indian sweet lovers. It is made with just readily available ingredients such as cottage cheese and thickened saffron milk.

Kesar in Rasmalai is that one main ingredient which gives it that beautiful yellow color and an elaborate taste to this wonderful dessert. Perfectly soft and juicy dessert drenched in chilled creamy milk makes it truly irresistible. 

Rasmali With Kesar Recipe: 

Add 5-6 Upakarma Ayurveda Kesar strands in a cup of warm milk and let it stand while you do rest of the preparations. 

Making the Chenna:

  1. Boil 3 cups of full cream milk on medium flame.
  2. Add half a cup of water with lemon juice into it. 
  3. Once the milk starts curdling, drain out the excess water with a muslin cloth and put it aside.
  4. Knead this dough & make small flattened balls. Cover them with a wet cloth.

Making the sugar syrup:

  1. Boil 2 cups of sugar in 1.5-liter water on medium flame till it becomes a little sticky.

The Final Stage:

  1. Add Chenna balls to the sugar syrup and boil for 5 minutes or until it doubles in size. Now it has started to look like Rasmalai.
  2. Add sugar (as per taste), pistachio & almond bits in Kesar soaked milk. Boil this mixture on medium flame & keep stirring until it becomes slightly thick and is reduced to half. Turn off the flame and transfer to a bowl.
  3. Fill a bowl with ice cubes. Place another bowl over it and pour sugar syrup in it. 
  4. Dip the rasmalai in it and then squeeze out the excess water.
  5. Add the rasmalai in Kesar & nuts milk. Let it soak for about 3-4 hours to absorb the creamy texture of the milk.

        Garnish with few kesar & pistachio and serve chilled.

Kesar Peda

It can be made with just little ingredients – kesar, khoya, milk, powdered sugar & cardamom powder. These kesar pedas can be a special edition to your festive treats. Kesar would not only give those hints of bright yellow color but will give them a royal taste. 

Peda With Kesar Recipe:

  1. Soak a few 5-6 Upakarma Ayurveda Kesar strands in lukewarm milk for about 10-15 minutes. 
  2. Now, cook Mawa (Khoya) for 7-8 minutes on medium flame while stirring continuously.
  3. Transfer the mixture into a plate and spread evenly. Keep aside for 20 minutes. 
  4. Now, add sugar, cardamom powder and Kesar milk into it and mix gently. Cling wrap it and refrigerate for 30 minutes.
  5. Now, mix it well and knead it into a dough.
  6. Then, shape it into flat round balls. Place a few Kesar strands on the pedas and press down gently. 
  7. Again, cling wrap it and refrigerate, till the pedas are firm. 
  8. Serve or store in an airtight container.

Kesar Malpua

Simple sweet Indian pancakes!

Malpua is a sweet pancake which is one of the oldest known desserts across India. It is a famous delight during festivals and can be prepared easily at home. Malpua is an extremely delicious recipe which is crispy from outside and soft from inside.

But this tempting version of Malpua is a dessert that you will drool over. A pinch of Kesar will elevate the taste while giving off a pleasant aroma. 

Malpua With Kesar Recipe: 

  1. Soak 2-4 Upakarma Ayurveda Kesar strands in lukewarm water.
  2. Boil water, sugar, and cardamom powder to make sugar syrup. Also, add kesar mixture.
  3. Mix in flour, cream, milk and semolina to form a lump-free batter of smooth texture.
  4. Pour this batter into hot ghee.
  5. Now, fry the malpua at low flame, turning both sides.
  6. Remove from ghee and dip the malpua in sugar syrup and let it soak a bit.
  7. Serve hot and garnish with chopped nuts and a few kesar strands.
