Rasmali With Kesar Recipe:
Add 5-6 Upakarma Ayurveda Kesar strands in a cup of warm milk and let it stand while you do rest of the preparations.
Making the Chenna:
- Boil 3 cups of full cream milk on medium flame.
- Add half a cup of water with lemon juice into it.
- Once the milk starts curdling, drain out the excess water with a muslin cloth and put it aside.
- Knead this dough & make small flattened balls. Cover them with a wet cloth.
Making the sugar syrup:
- Boil 2 cups of sugar in 1.5-liter water on medium flame till it becomes a little sticky.
The Final Stage:
- Add Chenna balls to the sugar syrup and boil for 5 minutes or until it doubles in size. Now it has started to look like Rasmalai.
- Add sugar (as per taste), pistachio & almond bits in Kesar soaked milk. Boil this mixture on medium flame & keep stirring until it becomes slightly thick and is reduced to half. Turn off the flame and transfer to a bowl.
- Fill a bowl with ice cubes. Place another bowl over it and pour sugar syrup in it.
- Dip the rasmalai in it and then squeeze out the excess water.
- Add the rasmalai in Kesar & nuts milk. Let it soak for about 3-4 hours to absorb the creamy texture of the milk.
Garnish with few kesar & pistachio and serve chilled.

- Transfer the mixture into a plate and spread evenly. Keep aside for 20 minutes.
- Now, add sugar, cardamom powder and Kesar milk into it and mix gently. Cling wrap it and refrigerate for 30 minutes.
- Now, mix it well and knead it into a dough.
- Then, shape it into flat round balls. Place a few Kesar strands on the pedas and press down gently.
- Again, cling wrap it and refrigerate, till the pedas are firm.
- Serve or store in an airtight container.

Malpua With Kesar Recipe:
- Soak 2-4 Upakarma Ayurveda Kesar strands in lukewarm water.
- Boil water, sugar, and cardamom powder to make sugar syrup. Also, add kesar mixture.
- Mix in flour, cream, milk and semolina to form a lump-free batter of smooth texture.
- Pour this batter into hot ghee.
- Now, fry the malpua at low flame, turning both sides.
- Remove from ghee and dip the malpua in sugar syrup and let it soak a bit.

Khoya Kesar Barfi
